All of the anime events essentially work to eradicate Kaneki’s character development from the manga. Many fans ignore the second season, regarding it outside of canon.
Where does Tokyo Ghoul re anime end in the manga?
It ends in the middle of 58. I highly recommend just reading it from the start, because there are nice details skipped/cut and what is shown in the anime fails to capture the beauty of the manga.
How did Tokyo Ghoul Season 1 end?
The Ending: How Did Kaneki Get a New Kakugan? In the last few moments of the season, Kaneki is kidnapped by Jason. He then uses the most brutal ways to torture him by cutting off parts of him but gives him just enough time to regenerate again.

So Kaneki’s hair color is a direct result of his Ghoul to Human ratio. Human Kaneki has black hair and once he accepted his Ghoul half completely his hair changed to white. In TG: Re he has a grip on his human half with the ghoul half still tugging on him from time to time, thus the salt and pepper hair.

He’s still alive. This is from the last chapter (164) of the Tokyo Ghoul:re manga. This is how Hide looks. The mangaka makes you think more than once that he dies in the manga.
Is Tokyo Ghoul manga better than anime?
The manga is better. Period. The first season of the anime is pretty well adapted, and actually pretty entertaining, but it lacks some content and rearranges the plot. Not to mention, the manga Tokyo Ghoul is just the first part of the series, Tokyo Ghoul:Re, which is probably going to end soon, being the sequel.
